Goose Island Brewery started as a single brew pub in 1988 and has since grown into a leading US brewery. 

After founder John Hall returned from a beer filled European trip, he began brewing in his hometown of Chicago, hoping to create beer like those he had in Europe! After much success, Goose Island had to open a new, larger brewery in 1995, and in 1999, after further growth, an additional brewpub opened! 

The brewery now utilizes, “32 fermenters, over 15 different yeasts, state-of-the-art filters, centrifuges and a 50 barrel JV Northwest 5 vessel system that brews 24 hours a day, 7 days a week.”

A great accomplishment of Goose Island was pioneering the Bourbon-aged beer! Their first run produced the Bourbon County Stout 2004. But their Barrel-aging didn’t stop there, as they also introduced a wine-aged beer a few years later!
